Making dough traditionally requires mixing, kneading, and a lot of cleanup. Thermomix simplifies the entire process.

It mixes and kneads the dough perfectly in minutes, creating a soft and elastic dough without any manual effort. The controlled temperature helps activate the yeast efficiently, which helps the dough rise beautifully.

Ingredients

500 g bread flour

200 g milk

150 g water

30 g orange blossom water

60–80 g sugar

10 g yeast

40 g sesame seeds

½ tbsp fennel seeds

½ tbsp anise seeds

½ tsp salt

60 g butter or oil

Egg Wash

1 tbsp milk

1 egg yolk

1 tbsp sugar

Topping

20 g sesame seeds


Preparations Steps

Step 1
Place bread flour, milk, water, orange blossom water, sugar, yeast, sesame seeds, fennel seeds, anise seeds, and salt into the Thermomix bowl. Knead Dough mode for 3 minutes.

Step 2
Add 60 g butter or oil and knead again using Dough mode for 2 minutes.

Step 3
Tip for faster dough rising: The dough should be soft.  Go to Manual Mode Set the Thermomix to 2 minutes / 110°F / speed 6. If the Thermomix does not turn properly, pause, add a little more water, then restart the setup.

 

Step 4
Divide the dough into 8 equal pieces. Shape each piece into a ball, cover, and let them rise for 1 hour.

Step 5
Preheat the oven to 180°C (350°F).
Prepare the egg wash by mixing milk, egg yolk, and sugar in a bowl.

Step 6

Brush the buns with the egg wash and sprinkle with sesame seeds. Place them on a baking tray lined with parchment paper and bake for 15–18 minutes at 180°C (350°F) until golden.

Step 7
Enjoy warm or at room temperature.
